Great for hot chocolate. This stuff is great. I don't order it anymore because my wife has developed an allergy to it - which made her very, very sad.
When you try to make ice cream, the oils cause the cocoa to 'pill' leaving specks of chocolate globules in the ice cream. I'm here looking for a Dutch process cocoa because I want it for ice cream. The search continues. Tastes OK, just doesn't present well. Was considering this one until I saw it was lightly 'dutched'. The problem with regular cocoa and, I assume this as well, is the oils from the cocoa remain in the powder.
Donna Sorry guys, pay the price and enjoy the best. Since I have begun to use this cocoa, my family and friends rave about the difference in my baked goods, my chocolate cake has been declared the best they have ever eaten. Recently I baked my chocolate cake with a cheaper dutch cocoa and my husband immediately could tell the difference.
Much better than the chemicals one buys marketed as Cocoa here in the United States. Pernigotti Cocoa, is one of the best type of Cocoa for hot Chocolate and or baking.
My brownies, which don't need modification came out so perfect that no one could believe that just changing the cocoa made that much of a difference. Another reviewer commented about the rich aroma when the bag is opened, and she's right. The only thing I have to say, to those who are not aware that there is a difference between Dutch Process and regular cocoa, is that you have to either watch the recipes you use it in or find a way to modify the recipe you have. The only cocoa I found that remotely reminds me of this one is Schokinag.
I bake. I would definitely recommend purchasing this product, and had I not bought enough from WS to last the holidays, I would be buying this last one available now. I did the latter for the chocolate cake and it was wonderful. A lot.
I found this at Williams-Sonoma, but it's priced much better here, even with shipping. Someone needs to snatch it up quick. Everyone looks for my baked goods at the holidays, but no one was expecting the chocolate cake made with Pernigotti. The cocoa is a beautiful reddish-brown, and has the richest, most delightful smell ever.
